"Siete Misterios Mezcal, founded in 2010 by brothers Julio and Eduardo Mestre, is a brand that's all about preserving the traditional art of mezcal production. They partner with local producers to foster the region's micro-economy and ensure the continuation of age-old mezcal-making techniques. Their mezcal is young, made from 100% mature agave sugars, and is traditionally produced with underground baking, natural fermentation, and at least double distillation in either clay pots or copper stills, depending on regional customs. The brand stands out for its artisanal production and limited batches, each varying in taste due to the unique micro-climate and mezcalero behind it. In 2021, they formed a global partnership with Chatham Imports, expanding their reach while staying true to their roots."
You can smell and taste the clay quite a bit. Lots of grass, vegetal taste. For having 50%, this mezcal is actually quite smooth, not too aggressive. Enjoyable, although not my absolute favorite, mostly because the clay is a bit too powerful for the rest of the flavors. Totally unrelated, but I really enjoy the 5 misterios bottle design.
